Battuta Di Manzo - Beef Tenderloin With Braised Endives

Recipe of the Day from Viaggio Restaurant : Battuta Di Manzo













Flattened US Beef Tenderloin served with balsamic braised endives and vegetables.

Serves 10

Ingredients Unit Qty.

Beef tenderloin 180g 10

Asparagus gm 80

Baby carrots gm 150

Salt gm 10

Garlic gm 10

White pepper gm 5

Demiglaze ml 200

Endive gm 600

Cherry tomato gm 70

Parsley gm 10

Balsamic vinegar ml 50


Method:

Flatten and season beef tenderloin cook in a hot pan and let it rest

Cook asparagus and baby carrots in salted water strain water and finish with a bit of butter.

Put demiglaze and balsamic vinegar in saucepan and braise endives until cooked

Divide endives between 10 plates place the beef on top finishing with carrots and asparagus.

Add a bit of butter to remaining sauce of endives and spoon over meat.
